To start the class we will enjoy the special herbal tea and hear the stories behind the popular cafés of Vietnam and their connection to the history and culture Though it is brewed using a surprisingly low tech technique, with a little metal filter called a Phin (a version of the French press), the flavor is truly rich and deep. This class will make sure that you can work with our filter and the Secret Recipe of the master to make our beautiful coffee at home. In this class you will learn about the process of coffee from crop to cup: Learn the steps needed to roast dark beans so that they mix perfectly with sweet condensed milk, which is an improvisation made due to the limitations on the availability of fresh milk at French colonial time. I will also show you some basic coffee information just like wine (such as origin of coffee bean, varieties of coffee, processing method, roasting level, …) After that, you will understand more about coffee and Vietnamese coffee bean. #2 • “Make cà phê sữa đá by yourself!” I will tell you about history of coffee in Vietnam, how coffee came to us, how it affects our daily life and how Vietnamese coffee with condensed milk became our iconic drink. Then, you will follow my instruction to make Vietnamese traditional coffee – “Cà phê sữa đá”.
