The Native Hawaiian Dundee, Charlie, though carries an English name (due to European sailors), is a true professional Native Hawaiian guide. This is "not a one size fits all" kind of adventure! And it is definitely not a 'staged' adventure tour. You will have four adventures to choose from, Doors 1-4. Door # one: Hike 1 mile to two small waterfalls design for children. A former sugar plantation which played a prominent role in Antigua and Barbuda's 300 year old history. You will also explore the natural phenomenon of Devil's Bridge, a natural bridge or arch created due to the Atlantic's waves crashing into the easterly coastline. Drive through quaint villages as you make your way to the Interpretation Centre to experience the culture and heritage of Antigua. Discover the ruins of the 18th century English Guard Post, Shirley Heights, which offers spectacular views of English Harbour and neighboring islands. Drive through the lush tropical area to get a firsthand view of the Antiguan black pineapple, the sweetest in the world. Samples of pineapple, and mango (seasonal), as well as a rum punch or fruit punch are offered.

Jerk cooking is an authentic Jamaican way to cook meat. Whether it is pork, chicken, beef or fish, the meat is seasoned and slowly cooked over an open fire or on a barbecue grill. "Jerk" is made up of regional spices ranging from scallions and thyme to pimento (all spice) and cinnamon. The first taste of jerked food is hot with pepper, but as you eat the other spices explode with stunning flavour. It is for this reason why all the other islands have adopted Jerk. Jerk is now viewed as a regional food, and everyone has their own special recipe to make jerk seasoning. Nicole will introduce visitors to all jerk spices and history, and discuss the various ways jerk seasoning can be used to give your food its own West Indian style when you return home. Take this class not just to explore new flavours, but to enjoy the experience of cooking with new friends in a West Indian home with great view of the Caribbean Sea!

The community largely depends on fishing for survival, spending Cambodia's wet season (May – October) fishing. During the dry season (December – April) as the river thins due to receding water, many turn to farming to supplement their income. Tourism, which started in the Eco village some years ago, is also a growing part of the local economy.
